At the okonomiyaki restaurant near the bowling alley, we had wonderful food (all japanese food is wonderful). I remember baked sweet potato for several reasons. First because it tastes great. Second because Wombat would put pieces in her napkin to take home and to snack on with her grandmother....and that was cute.
So today I made a very hot oven. Put olive oil in a baking tray. Scrubbed the skin of a whole sweet potato, then cut it into wedges. I then put it in the tray, sprinkled it with pepper, salt and a little korean chilli powder, covered it with another tray, then cooked it for 40 minutes. During the cooking I turned it once and basted the potato with hot oil.
While it was cooking, I mixed equal parts of butter and honey.
Now the cooking is finished. I had removed the lid from the tray for the final five minutes of cooking to crisp the skin. I am now sitting at my computer eating my sweet potato with melted butter and honey and missing Melody and Wombat.
But the food is great. Melody, next time you go to MaxValue, please buy a sweet potato and cook it as I did for your self and Wombat...and take some to your mother's house while it is still hot.......IT'S YUMMY.
